Alpha Cyclodextrins is a cyclic oligosaccharide composed with 6 glucose units.Its cavity diameter is about 0.47-0.53 nm, which is the smallest "molecular capsule"in the three natural cy- clodextrins.

Due to its small cavity structure,Alpha Cyclodextrins is mainly used for inclusion of small molecule compounds.It could increase the  stability,solubility and control the release of guest molecules.It also could be used as dietary fiber,antioxidant and emulsification etc,which has been widely used in functional food and health products.
